Pumpkin Spice Pancakes Recipe
Equipment
- Electric Mixer
- Large Mixing Bowl
- Measuring Cups & Spoons
Ingredients
- 2 Egg XL or Jumbo for best results
- 2 cup Evaporated Milk You can use water because the baking mix has milk powder in it
- 1 1/2 cups Canned Pumpkin
- 1/2 cup Olive Oil Cooking oil of choice or butter can be used
- 2 tspn Vanilla Extract

Instructions
- Combine all ingredients in mixing bowl
- You can let it set overnight or use it right away
- Cook in medium frying pan or on griddle on medium heat, 2-3 minutes on each side or until done
Notes
This recipe can be halved. I use big recipes, cook it all and freeze some for easy preparation later.
You can freeze each pancake singularly and heat it in the microwave, toaster oven, or toaster.
