The Best Blueberry Muffins
These blueberry muffins are sure to be a crowd pleaser. They don't last til the next day in my household. Create with caution! LOL! 🙂
Equipment
- Medium-sized Mixing bowl
- Electric Mixer I prefer one that is 6-speed
- 2 Measuring cup set One for wet ingredients & one for dry ingredients
Ingredients
- 1/2 cup butter, salted softened
- 1 1/4 cup sugar
- 2 eggs
- 1 tsp vanilla
- 1 tsp cinnamon optional
- 1/2 tsp salt
- 2 tsp baking powder
- 2 cups all-purpose flour
- 1/2 cup whole milk
- 2 1/2 cups blueberries fresh or frozen, wash, drain & remove stems
Instructions
- Cream butter and sugar
- Add eggs one at a time. Beat after each addition on low only until the egg yolk disappears
- Add vanilla and mix
- Mix flour, salt & baking powder in separate bowl
- Add half to mixture and mix
- Add half the milk and mix
- Add the rest of the flour mixture and mix
- Add the rest of the milk and mix well
- Fold in blueberries. You can mix with the mixer just be aware that some of the blueberries will be mashed in the mix.
