The Best Blueberry Muffins

These blueberry muffins are sure to be a crowd pleaser. They don't last til the next day in my household. Create with caution! LOL! :)

Equipment

  • Medium-sized Mixing bowl
  • Electric Mixer I prefer one that is 6-speed
  • 2 Measuring cup set One for wet ingredients & one for dry ingredients

Ingredients
  

  • 1/2 cup butter, salted softened
  • 1 1/4 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp cinnamon optional
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 2 cups all-purpose flour
  • 1/2 cup whole milk
  • 2 1/2 cups blueberries fresh or frozen, wash, drain & remove stems

Instructions
 

  • Cream butter and sugar
  • Add eggs one at a time. Beat after each addition on low only until the egg yolk disappears
  • Add vanilla and mix
  • Mix flour, salt & baking powder in separate bowl
  • Add half to mixture and mix
  • Add half the milk and mix
  • Add the rest of the flour mixture and mix
  • Add the rest of the milk and mix well
  • Fold in blueberries. You can mix with the mixer just be aware that some of the blueberries will be mashed in the mix.
