Spinach & Mushroom Omelette With Cheese. I have mine with a half of an avocado and 3/4 to a whole tomato.

Ingredients
  

  • 3 eggs
  • 1 cup spinach
  • 1 cup mushrooms, sliced
  • 2 tbs shredded cheese Use what cheese you like. Cheddar and Feta are favorites of my family
  • 1 tsp olive oil A couple drops in each microwave omlet container
  • garlic and onion powder to taste
  • 1 small pinch pink salt Pink salt is strong. You don't need a lot.
  • 1/8 tsp cayenne pepper Optional. If you don't like spicy you can omit although I didn't find it spicy.

Method
 

  1. In a small bowl, scramble eggs and seasoning.
  2. Add a few droplets of olive oil across the bottom of your microwave dish or microwave omelet maker.
  3. Add veggies and cook them in the microwave, covered, for 2 minutes on HIGH. If you have a powerful microwave reduce to 80%.
  4. Stir and cook in the microwave for 2 more minutes or until cooked to your desired doneness.
  5. Sprinkle cheese, let it melt then serve. Enjoy!
